Sunday nights are such a conundrum for me. On one hand, I spend all day psyching myself up for a week of healthy eating and getting my life together. I convince myself I’m going to drink a green smoothie every morning and actually make it to spin class on time. I’m going to negate the six PBRs and three slices of pizza I ate in rapid fire at 2am the night before by avoiding carbs all week long. By Monday morning I’ll be better, faster, stronger…and way more organized.
On the other hand, I just want to lay around in bed all night catching up on True Detective with a burrito.
One of my go-to Sunday night “comfort food” meals is chili and cornbread. My mom makes awesome chili but I think I also adopted it as a favorite food after seeing the Parent Trap as an 11-year old. It was one of Lindsay Lohan’s character’s favorite foods (thank god I didn’t adopt anything else from her). As a former vegetarian and vegan, I still occasionally get grossed out by meat. As an alternative to chili with cornbread (and with way fewer calories), I decided to make a chipotle black bean soup with cheddar-dill popovers.
Chipotle Black Bean Soup Recipe & Adjustments
I used beef broth in lieu of vegetable broth (sorry, PETA) for added flavor. I also topped with sour cream and jalapeños for an extra kick. Please note I’ve burned half of my taste buds off from excessive sriaracha use so an “extra kick” to me may cause some people to pass out/cry/sweat profusely. The adobo peppers in chipotle sauce (found in the latino aisle of any grocery store) used in this base recipe are VERY spicy so no pressure to add more heat.
Cheddar-Dill Popover Recipe & Adjustments
Follow this simple popover recipe. Plain popovers are delicious on their own but even better with fresh herbs and cheese. I added a small handful of fresh chopped dill and shredded sharp cheddar to the batter.
You can make popovers in a traditional muffin tin but once you become addicted, I suggest purchasing a popover tin (found anywhere from Bed, Bath & Beyond to Williams Sonoma). For any of you Brits or Anglophiles out there (if male, call me. if female, do you have brothers?), you can also use popover tins to make Yorkshire Pudding.
Popovers should be consumed immediately out of the oven before they start to deflate (Yes, I ate all six and it was totally worth it).
